Story
The Aviation is a pre-Prohibition cocktail created by head bartender Hugo Ensslin at the Hotel Wallick in New York's Times Square.
Known for its gorgeous light-purple hue, the drink's signature colour and flavour comes from crème de violette, or violet liqueur.
The floral liqueur is balanced by the acidity of fresh lemon and the sweet aromatic maraschino. What could be better than an aviation sunset?

Ingredients
- ATMOS dry gin (2 shots: 60 ml)
- Fresh lemon Juice (20 ml)
- Maraschino liqueur (1/2 shot: 15 ml)
- Creme de violet liqueur (5-10 ml)
- 1 sour cherry, for garnish

Mixology
- Combine all ingredients into a cocktail shaker and shake until chilled
- Strain into a chilled glass
- Garnish with a sour or brandied cherry
